Erdbeertorte mit Quark-Mascarpone Creme - sehr lecker und fruchtig! | Erdbeertorte ohne Gelatine

This strawberry cake with quark and mascarpone cream without gelatin tastes incredibly delicious and fruity. Try this recipe. Happy baking! For the biscuit base: 225 g of flour 160 g of sugar 5 eggs 3 tsp baking powder For the cream: 500 g cottage cheese (quark) 500g mascarpone 500 g of whipped cream 400 g fresh strawberries 200 g diced fresh strawberries 1 tsp vanilla extract 100 g powdered sugar 4 packets of whipped cream For the decoration: 150 g of fresh strawberries Preparation: 1. Preheat the oven to 170°C top/bottom heat 2. Place the sugar and eggs in the bowl and beat until creamy, 5 minutes on the highest setting of the stand mixer. Mix the flour with baking powder and carefully fold spoonful into the egg mixture. 3. Line the springform pan with baking paper and put the dough for the sponge cake base into the springform pan and smooth it out. Bake in a preheated oven at 170° C top and bottom heat for 25 minutes. Then take it out of the oven and let it cool well completely. Remove the sponge cake base from the springform pan and divide or cut the base to the desired height with the cake base cutter. 4. Put the heavy cream in the bowl and whip until stiff. Add the whipped cream and continue beating briefly. Put the mascarpone and cottage cheese in the bowl and stir with the hand mixer. 5. Wash the strawberries, drain and place in the measuring cup. Puree with the blender. Pass through a fine sieve and mix with the quark cream. Sieve the icing sugar and mix with the quark cream. Add 1 tsp vanilla extract and stir. Fold the whipped cream into the quark cream. 6. Put the bottom layer in the springform pan, because I don't have a cake ring. Fill half of the quark mascarpone cream on top and spread evenly. Scatter the diced strawberries on top. Then put the second base on top and put half of the remaining cream on top and smooth it out. Place in the fridge for about 4 hours or overnight. 7. Carefully score the cake along the edge of the springform pan with a knife. When the edge is free, the springform can be easily removed. Then smooth the edge of the cake with the remaining cream. Place the cake in the fridge for another 2 hours. 8. Wash, drain, clean and halve the strawberries for the decoration. Decorate the cake with the cream icing and strawberries.
