Basic Durban Chicken Curry Recipe: Making the simple chicken curry recipe we cook every week

Chicken curry and rice or chicken bunny chows call for a good chicken curry - almost a staple in most Durban households on a weekly basis because chicken is widely available and widely loved. This is the basic recipe I use in making chicken curry every week almost. Ingredients 1.5kg frozen or fresh chicken Marinated with 1 tsp chicken spice 1 tsp crushed ginger garlic 1 tsp lemon juice 1/2 cup oil 1 onion finely sliced 1 small tomato, grated 2 small potatoes, quartered 1 cup frozen peas 1 curry spoon mixed masala with curry leaf 1 tsp hurdee (tumeric) Handful fresh thyme 1 tsp fine salt Garnish with spring onion and dhania Alternate to mixed masala 2 tbs chillie powder 1 tsp hurdee 1 tsp dhania powder 1 tsp jeera powder 1 tsp garam masala Served with rice and salad, or with dhal and rice or in bunny chow.
