PORRA ANTEQUERANA ¡La Favorita De Los Malagueños!
Porra de Antequerana is the favorite cold soup of Malaga residents. It's a cold soup perfect for summer, made with tomatoes, peppers, garlic, olive oil, and vinegar. It's often confused with salmorejo, but in this Porra de Antequerana recipe, I'll tell you the difference. Cut them into quarters and place them in a blender. Blend well. 2️⃣ Remove the stem and seeds from the green pepper and cut it into large chunks. Cut the red pepper in half (this is optional; some people add it and others don't. Personally, I like the sweetness it adds). 3️⃣ Add the peppers to the blender along with the garlic clove, vinegar, and salt. Blend again. 4️⃣ Transfer the blended vegetables to a bowl, removing the seeds and skin with a sieve (this is optional; it depends on your preferred texture). Blend the bread and vegetables in batches with your hand blender, breaking it up. This will make it easier. 5️⃣ When you get a fine texture, add the olive oil in a thin stream, whisking constantly. Finally, season with salt and vinegar to taste. Cover the bowl and refrigerate the porra for at least two hours. As it cools and rests, it thickens. 6️⃣ When serving, accompany the porra antequerana with diced ham, hard-boiled egg, and tuna. 👌 Note for making the Porra antequerana: To prepare it, you can use only a hand blender. I like to use both: the blender because it makes the vegetables very fine, saving effort, and then the hand blender in a bowl because I can't fit all the ingredients in the blender. 🛒 Our #FoodandGlory Products on AMAZON: 📌 Discover the products used in our videos here 👇👇👇 🇪🇸 https://www.amazon.es/shop/foodandglo... 🇺🇸 https://www.amazon.com/shop/foodandgl... *By purchasing through this affiliate link, you'll be supporting Food and Glory with a small commission at no additional cost to the product price.
