Brush them with olive oil. Bake them in the oven, preheated to 200°C (390°F), top and bottom heat, without fan, for 40 minutes. After the first 20 minutes, turn the peppers over so they roast well on all sides. When you remove the tray from the oven, cover it with aluminum foil and let it cool. This way, the peppers will be easier to peel. 2️⃣ Peel the potatoes and cut them into quarters. Boil them until tender (about 20 minutes). Place them in a large bowl. 3️⃣ Peel the peppers and remove the seeds. Add them to the potatoes. 4️⃣ In a mortar, crush the garlic with a little salt. Then, add the vinegar. Add this mixture to the potatoes and pepper. 5️⃣ Blend everything with your hand blender (you can choose to use a potato masher or mash everything with a potato ricer, depending on your preferred texture: coarser or finer). Add a little of the potato cooking water if the result is too thick. Mix with a spoon. Then, add the olive oil and mix again.
