Hello! This week we cook a warming and hearty red lentil soup, I go to the National museum to look at a favorite painting, and I recharge by walking along the beautiful Alna river which is stunning this time of year. // RED LENTIL SOUP (Serves 2-3 people. We made a double batch) 1 table spoon olive oil 1 onion 1 carrot 1 table spoon tomato puree Optional: Your favorite chilli paste (We use Calabrian chilli paste) One tea spoon for this particular chilli paste 1 liter vegetable stock 170 grams split red lentils Salt og pepper to taste Fry the onion and the carrot till the onions are soft Add the tomato puree and the chilli paste. After a few minutes, add the vegetable stock and the lentils. Bring to a boil. Reduce the heat and simmer for about 20 minutes till the lentils are soft. Blitz and add salt + pepper. The soup is nice with a few squeezes of lemon juice!
