http://thedinnerroom.blogspot.co.uk This is a great way to use up leftovers from the previous evening. In this case I cooked too much mash Potatoes, roast Carrots and Brussel Sprouts. I also had a couple of sausages left over from the prior lunchtime. You could even mash up roasted Potatoes or Parsnips or perhaps substitute steamed or roast Pumpkin or Squash instead of the potatoes. Bubble and Squeak comes from the time where poor folk had left over beef and cabbage. They fried this together in patties in a big skillet and the beef bubbled as it fried and the cabbage made you squeak after you ate it. Ingredients: - 3 cold leftover roasted Carrots Cold leftover cooked mashed Potatoes Cold left over steamed Brussel Sprouts Cold left over fried Sausage Raw Kale (large stalks removed) 2 Spring Onions/Scallions Parsley Salt & Pepper to taste 2 tablespoons vegetable oil to fry Method:- Dice or mash the carrots Dice the Sausage Dice the Spring Onions Roughly chop the Brussel Sprouts and the Kale removing the woody stalks of the Kale. Finely chop the Parsley. Mix all the chopped vegetables and herbs into the cold mashed Potatoes. When everything is well combined, season to taste with the Salt and the pepper. Form into patties about two centimetres in depth, about the width of your palm. Shallow fry in a few tablespoons of vegetable oil for a few minutes on each side until there is a golden crust on the patties. Serve with a Salad or with a fried egg on the top with some crusty bread for a lovely brunch.
