Bubble and Squeak – a British classic and a clever way to use up leftovers! This is a typical British side dish that was originally created to use up leftover roasted vegetables. It’s a fantastic way to stretch out food, making the most of what you have. For a big roast dinner, you will normally see lots of leftover vegetables as everyone pigs out on the meat. Try and achieve a minimum of 50% potatoes to the other ingredients. To make this, You can roast, boil, and pan-fry the vegetables. An air fryer is great for this—just don’t tell anyone I said that!! Ingredients: 🥔 7 large boiled potatoes 🥬 2 cups Cabbage/Kale/Spinach 🥕 2-3 cups roasted vegetables 🧅 1 large white onion 🌶️ 2 large red chillies (medium hot) 🥓 1 cup of smoked bacon bits 🧈 200g butter 🫒 Olive Oil 🧂 Salt and Pepper (I should have used white pepper) Cooking Tips: 🔥 Start off with medium heat—you want time and heat to give you that perfect caramelization, not blistering heat. 🧈 Use enough butter to help with this process.
