Place 2 jin (1 catties) of flour in a bowl. Make a well in the center of the flour and gradually pour in 220-230 grams of water, stirring vigorously in the same direction until the dough forms clumps. Knead until smooth, let it rest for 20 minutes, and repeat three times. Use a noodle shaving knife to cut the dough into willow leaf-shaped pieces. Prepare the stir-fried pork. Boil a small bowl of Sichuan peppercorns in hot water to make peppercorn water. Cut the spinach stems into sections, slice the bamboo shoots thinly, and cut the wood ear mushrooms. Blanch the mushrooms and drain. Slice 3 liang (150g) of pork tenderloin and add 3 grams of salt, a little MSG, and a small spoonful of peppercorn water. 1. Use two egg yolks to knead the meat slices until sticky, then sprinkle in cornstarch and continue kneading until well coated. 2. Heat oil in a wok. Once the oil is hot, add the meat slices and quickly stir-fry until golden brown. Remove from the wok. 3. Leave some oil in the wok. Add minced ginger and garlic slices and stir-fry until slightly golden. Add scallion slices, then add the meat slices. Drizzle a little vinegar along the edge of the wok to release the aroma. Add Sichuan peppercorn water and 20g soy sauce (add the Sichuan peppercorn water and soy sauce in two batches). Finally, add the side dishes, thicken with cornstarch slurry, and add a final drizzle of vinegar along the edge of the wok. Remove from heat. 4. Cook noodles and pour the stir-fried meat over them.
