Boil a small bowl of Sichuan peppercorns in hot water to make peppercorn water. Cut the spinach stems into sections, slice the bamboo shoots thinly, and cut the wood ear mushrooms. Blanch the mushrooms and drain. Slice 3 liang (150g) of pork tenderloin and add 3 grams of salt, a little MSG, and a small spoonful of peppercorn water. 1. Use two egg yolks to knead the meat slices until sticky, then sprinkle in cornstarch and continue kneading until well coated. 2. Heat oil in a wok. Once the oil is hot, add the meat slices and quickly stir-fry until golden brown. Remove from the wok. 3. Leave some oil in the wok.
