Schnippel-Bohnen in heller Soße mit Salzkartoffeln – Einfach lecker und preiswert
Today we are preparing a delicious lunch. It's an old recipe from my mother: inexpensive, easy and quick to prepare. Ingredients for approx. 4 - 6 portions 800 g green beans 1 onion 2 cloves of garlic 2 bunches of parsley 18 potatoes 100 g butter 100 g flour 500 ml milk 500 ml vegetable stock 1 tablespoon lemon juice (alternatively 1 tablespoon vinegar) spices 1 teaspoon salt 1 teaspoon pepper 1 teaspoon curry Preparation First wash the beans, cut off both ends and then cut into diagonal pieces with a knife. My mother always did it this way. Do you know why it should be diagonal? Then please let me know in the comments. Put the beans in a pan with 2 teaspoons of salt, cover with water and set aside. Peel the potatoes and wash them under running water. Now cut into larger pieces and place in a pan of salted water. Then set aside. Finely dice the onion. Press the garlic. Finely chop the parsley. Tip: If you place a damp cloth under your chopping board, it won't slip. We've now done enough chopping. Now it's time to cook. Place the potatoes and beans on the hob and cook for about 20 minutes. Heat the butter in the other pan and fry the onion and garlic until translucent. Pour the flour into the pan all at once and stir everything together. Add the spices. Pour in the cold milk, sip by sip, stirring vigorously all the time. Do not pour in all at once, otherwise there will be lumps. Make your own vegetable stock cubes ➔ • Gemüse-Brühwürfel selber machen - OHNE CHE... Always stir well so that nothing burns. Season again with salt and pepper and don't forget to stir. Now add the lemon juice to the sauce. If you don't have lemon juice, you can use a tablespoon of vinegar. Prick the potatoes and beans with a knife to make sure they are cooked soft. When the potatoes are soft, pour off the water and put the pot with the cooked potatoes back on the hob for a while. This allows the excess water to evaporate and the potatoes are nice and dry.
