A glimt in to our everyday slow off grid homestead life, here at the small farm i Norway. It's April and spring has arrived. The sheep are in the final stages of pregnancy, and I’m finishing up preparations in the sheep house before the lambs are born. The pigs are having a great time rooting through the old sheep straw, helping prepare the soil for what will become our vegetable garden later this year. I'm sowing lots of plants in seed trays. Since it's still frost at night, they stay indoors, but during the day they enjoy the warmth of the sunny wall outside. There aren't many vegetables left from last season, but what's left must be used—so I make a risotto with finely chopped vegetables instead of rice, using up the last of our Brussels sprouts and other brassicas from the herb garden. I'm also trying to tap birch sap and ferment it with a bit of honey, hoping to create a refreshing, sparkling spring drink. At the end of the video, it’s time to taste, and to our delight, the experiment worked! The birch sap has turned into a delicious, naturally sparkling spring beverage. The days are growing longer on our little farm, filled with birdsong from early morning and cheerful little wood anemones peeking out of the ground.
