I mixed 50/50 brown buckwheat with husks and 50/50 whole buckwheat with husks removed, milled it in a stone mill, and then sieved it through a 24-mesh sieve to make coarsely ground buckwheat flour. (^^) The dark, rough texture was incredibly delicious, and the texture and flavor were apparent with every bite! I've also included some tips for those who have trouble making 100% buckwheat noodles, so I hope this helps.
