Malfatti Over Ragu

Delicious little dumplings originally from Northern Italy, and later Tuscany. Now famous all over due to their ease of preparation and good flavor. “Malfatti” in Italian means “poorly made” due to their uneven shapes because of hand forming. They are also known as a poor man’s gnocchi. Here I serve them over a ragu, as is one of the methods besides warmed over browned butter and fresh sage. For the ragu : 1 LB Spicy Italian Pork Sausage ½ LB Ground Chuck 1/3 C Chopped Fresh Basil ¼ C Chopped Fresh Oregano 1 C Chianti Wine 1 TBSP Chopped Cheaters Garlic 2 TSP Grated Parmesan 2 OZ Tomato Paste Splash Olive Oil 24OZ Jarred Spaghetti or Marinara sauce of your choice For the Malfatti : 1 ½ LB Fresh Spinach 5 OZ Grated Parmesan 10 OZ Ricotta 2 Eggs 1 C Flour 4 TBSP Breadcrumbs Sea Salt, Black Pepper When the Malfatti come to the surface continue to boil them for 4 to 5 minutes longer.
