Resep Naan Kuah Kari
Campuran tepung protein tinggi dan protein sedang berguna agar tekstur roti elastis namun tetap empuk. Sensasi menyantap kuah kari dengan roti akan memberikan pengalaman makan yang lebih menyenangkan dibanding dipasangkan dengan nasi. Bahan Naan: 370 g tepung terigu protein tinggi 100 g tepung terigu serba guna 9 g garam 250 g air hangat 11 g ragi instan 80 g yoghurt 10 g minyak zaitun Bahan Kuah Kari: 200 g kentang kukus dengan kulit lalu kupas 500 ml air 40 g bawang merah, iris 10 g jahe parut 20 g bawang putih parut 50 ml santan Garam Minyak samin/butter Bahan Bumbu Kering: 2 sdt bubuk cabai 1/2 sdt kunyit bubuk ¼ sdt jinten bubuk 1/4 sdt lada putih bubuk 1/4 sdt ketumbar bubuk 1/4 sdt pala bubuk 15 buah kapulaga hijau 3 buah kembang lawang 1 tangkai daun kari 5 cm kayu manis Naan: 1. Campurkan ragi instan ke dalam air hangat, aduk rata. 2. Siapkan wadah mixer. Campur tepung terigu protein tinggi, tepung terigu serba guna, garam, campuran air hangat dan ragi, yogurt, dan minyak zaitun. Mixer dengan hook khusus mengulen roti hingga kalis. 3. Siapkan permukaan datar atau talenan lebar. Taburi dengan sedikit tepung agar tidak lengket. 4. Letakkan adonan yang sudah kalis. Uleni sebentar hingga elastis, lalu bulatkan. 5. Simpan adonan dalam wadah yang ditutup dengan serbet basah lalu letakkan di tempat yang hangat. Istirahatkan adonan selama xx hingga mengembang. 6. Ambil adonan, kempeskan lalu buatkan. Giling setipis kira-kira 1 cm berbentuk bulatan. Kuah Kari: 1. Panaskan wajan, masukkan minyak samin. Tumis bawang merah, jahe, bawang putih, hingga harum. Tambahkan bumbu kering, tumis kembali hingga harum. 2. Masukkan santan, didihkan sambil diaduk terus agar santan tidak pecah. 3. Masukkan kentang, aduk rata. Beri garam, cicipi. 4. Masak hingga cairan sedikit menyusut. Sajikan bersamaa Naan. Mix the instant yeast into warm water, mix it well. 2. Prepare the mixer container. Mix the high-protein flour, all-purpose flour, salt, the mixture of warm water and yeast, yogurt, and olive oil. Grind as thin as about 1 cm in a shape of a sphere. Curry Sauce: 1. Heat the pan, add the ghee oil. Saute the onion, ginger, and garlic until fragrant. Add dried spices, saute it again until fragrant. 2. Add the coconut milk, boil it while stirring constantly so the coconut milk doesn't break. 3. Add the potatoes, mix well. Add salt, and do a taste test. 4. Cook until the liquid decreases slightly. Then serve the finished curry sauce with naan.
