How to Make the BEST Rustic Nectarine Galette - Flaky & Crispy | Only Cooking Sounds (No Music)

I have made this recipe many times and always come back to it. This is the perfect rustic pastry, and you do not even need a special pan to make it. The frozen butter and high oven temperature create an incredibly flaky, crispy crust that holds the sweet nectarines (or any other fruit really) beautifully. It is simple to prepare, incredibly satisfying, and turns out perfectly every single time. INGREDIENTS 175 g (1 1/3 cups) All-purpose flour 1 tbsp Sugar 1 pinch Salt 115 g (1/2 cup) Unsalted butter, cubed & frozen 3-4 tbsp Ice water 3-4 medium Nectarines, sliced into wedges 40 g (1/4 cup) Sugar 1 tbsp Cornstarch 1 tsp Vanilla extract 1 Large egg, lightly beaten (for egg wash) Coarse sugar, for sprinkling INSTRUCTIONS Make the pastry dough: In a large bowl, whisk together the all-purpose flour, sugar, and salt. Incorporate the frozen cubed butter until coarse crumbs form. Hydrate and chill: Add the ice water gradually until the dough holds. Knead briefly, shape into a disc, and chill in the freezer for 15 minutes (or 45-60 minutes in the fridge). Prepare the filling: In a separate bowl, gently toss the sliced nectarine wedges with sugar, cornstarch, and vanilla extract to coat the fruit. Assemble the galette: Roll out the dough directly on parchment paper to a 28 cm (11 inch) circle. Arrange the fruit in the center, leaving a border. Pleat the edges inward to secure the filling. Finish and bake: Brush the border with egg wash and sprinkle with coarse sugar. Bake at 200°C (400°F) for 35-40 minutes until deeply golden. Let it cool and set for at least 10 minutes.
