Ingredients and Method: Lady Fingers / Sponge fingers - about 15-17 Brownie batter: Dark Chocolate 225g Butter 90g (⅓ cup, 1 tablespoon) 3 Eggs (medium size) Brown sugar 180g (¾ cup, 2 tablespoons) Plain flour 50g (⅓ cup) Cocoa powder 15g (2 tablespoons) For soaking milk: Condensed milk 100g (¼ cup) Instant Coffee 1 tablespoon Hot water 80ml (⅓ cup) For the frosting: Mascarpone cheese 240g (1 cup) Dulce de leche or Condensed milk 100g (¼ cup) Cocoa powder for dusting Measuring cup size - 240ml Baking pan 20x20 cm (8x8 inch) Method: Make the brownie batter: Melt the dark chocolate and the butter. Mix well. Set aside. Whisk the eggs and the sugar for about 3 minutes. Pour the chocolate mixture. Mix well. Add the flour and the cocoa. Mix well. Get the lined baking pan. Add half the batter and spread evenly. Layer the sponge fingers over it, covering the whole surface. Pour the remaining batter over the sponge finger layer. Bake in a preheated oven at 175c (350f) for about 25-30 minutes. Make the soaking milk by mixing the ingredients together. When the brownie is done, poke a few holes and pour the milk mixture. Let it rest and cool down completely. Make the Frosting: Whisk the two ingredients until creamy for about 2 minutes. Spread over the cooled brownie. Dust a generous layer of cocoa powder over it.
