This video is also a record of a tour exploring the appeal of Tokushima ramen. Tokushima ramen can be broadly divided into three types: brown, yellow, and white. This time, we visited two representative restaurants of the yellow and brown types that have long been popular among locals. The first restaurant is Kawai, located in Kawauchi-cho, Tokushima City. This restaurant's distinctive feature is its clear, golden-colored soup. As a representative restaurant of the yellow type of Tokushima ramen, it brings out the umami of chicken bones and pork bones in a balanced way. The saltiness is moderate and the aftertaste is clean, making it a bowl that you won't get bored of until the very end. The melt-in-your-mouth pork slices are also a unique feature of this restaurant. The second restaurant is Takayoshiya, located in Tsuda-cho, Tokushima City. Here you can enjoy the classic brown soup of Tokushima ramen. It looks rich, but when you actually put it in your mouth, the sharpness of the soy sauce and the depth of the broth are pleasant, making it surprisingly not heavy. The medium-thick straight noodles clung well to the soup, providing a consistently delicious flavor that clearly explains why so many regulars continue to visit. Each restaurant has its own unique style, and by comparing the different dishes, I was able to get a sense of the richness of Tokushima's food culture.
