MALAYSIAN CHICKEN CURRY WITH PINEAPPLE| ASIAN RECIPES| TRADITIONAL COOKING

This recipe is a very traditional Malaysian chicken curry popular in the outskirts of Malaysia. This goes with almost anything from rice to noodles. The ingredients are listed below for 4 to 6 people: 1 kg of chicken. 1 large raw pineapple. 2 large tbs of coconut oil. 1 large Bombay onion chopped. 2 inches of Chinese ginger. 1 inch of Sri Lankan or Indian ginger. 2 big cloves of garlic. 4 to 5 Thai bird eye Chillies. (red or green) 1 stick of Ceylon cinnamon. 4 pods of cardomom. 1 large pandan leaves cut into 4 pieces. few curry leaves. 1 1/2 Tbs of curry powder (unroasted) 1/2 Tbs of Corriander powder. 1/4 Tsp of Cumin powder. 1 inch of fresh Turmeric. 4 pieces of lemongrass.(smashed) 1st extract of coconut milk 600ml to 1 litre depending on your preference. Or 1 cup of thick coconut cream mixed with half cup of water. □please note that you can add more or less coconut cream depending on how wet or dry you want this curry to be.
