This recipe features tender Bata fish cooked with a rich assortment of summer vegetables like potatoes, ridge gourd (jhinge), pointed gourd (potol), brinjal, and drumsticks (sojne data). Prep the Fish: Clean the Bata fish pieces and marinate them thoroughly with salt and turmeric powder. 2. Prep the Veggies: Cut the potatoes, ridge gourd, pointed gourds, brinjal, and drumsticks into equal, uniform lengths. Wash them well. 3. Parboil: To ensure even cooking, parboil the cut potatoes and pointed gourds in a bit of salted water. Drain and set aside. 4. Frying: Heat mustard oil in a pan. Fry the marinated Bata fish until golden on both sides, remove, and set aside. In the same oil, fry the hing bori until crisp and golden, then set aside. 5. Vegetable Sequence: In the hot oil, add the vegetables in sequence to cook them perfectly: start with the parboiled potatoes and pointed gourds, followed by the drumsticks, brinjal, and finally the delicate ridge gourd. Sauté everything together. 6. Spice Infusion: Add turmeric powder and Kashmiri red chilli powder to the veggies. Stir well. 7. Simmering: Pour in enough water to form a light curry base. Bring it to a boil, then gently add the fried fish pieces back into the pan. Cover and let it cook on medium heat. 8. The Flavor Secret: Prepare a fresh masala paste by grinding together Radhuni and Kalo Jire with a splash of water. Pour this aromatic paste directly into the simmering curry. 9. Final Touch: Top the dish with the crispy fried hing bori and fresh slit green chillies.
