This recipe features tender Rohu fish steaks cooked with a colorful medley of long-cut potatoes, ridge gourd (jhinge), brinjal, and fresh, crunchy bottle gourd greens (lau shak). In this video, we share a unique dual-pan technique: slow-sweating the vegetables to lock in their natural sweetness before pouring them over fried fish, and finalizing the dish with a aromatic tempering of Paanch Phoron, dry red chilli, and crisp bori. Preparation: Clean and cut the potatoes, ridge gourd, and brinjal into uniform, long pieces. Clean the bottle gourd stalks and leaves (lau doga), cutting them into equal lengths. Marinate the cleaned Rui fish with salt and turmeric powder. 2. Frying the Fish: Heat mustard oil in a pan and fry the marinated fish steaks until golden-brown on both sides. Remove and set aside. 3. Cooking the Veggies: In the same oil, add the potatoes and fry for a minute. Add the rest of the vegetables (ridge gourd, brinjal, and lau doga) and stir-fry gently. Season with salt and turmeric powder. Cover and cook on a low flame until the vegetables are tender and cooked through in their own juices. Add a pinch of sugar to balance the flavor. 4. Building the Jhol: Pour in hot water to create a light curry base and bring it to a rolling boil. Carefully remove this vegetable gravy from the heat and pour it directly over the fried fish in a bowl. 5. The Final Tempering: In a separate kadai, heat a splash of mustard oil. Fry the bori and a dry red chilli until crisp and golden. Toss in the paanch phoron seeds and let them splutter to release their intense aroma. 6. Combining Everything: Carefully pour the reserved fish and vegetable jhol back into this tempered kadai. Bring the entire curry back to a boil, allowing the bori to slightly soften and absorb the juices. 7. Aromatic Finish: Turn off the flame and finish the dish with fresh slit green chillies and a generous sprinkle of freshly roasted paanch phoron powder.
