Cut off the core part of cabbage, then cut the cabbage into small pieces, mix the cabbage with salt, set aside for 15 minutes. 2. Break the tofu into small pieces, stir fry with garlic and a small amount of oil, then add bay leaf, star anise, soy sauce, maple syrup and water (just enough to cover the tofu). Bring water to a boil , then turn to low heat and cook until water has evaporated, discard bay leaves and star anise. 3. Squeeze out water from the cabbage, and mix it with tofu. Taste and add more salt if needed. 🥟 Mixed Veg Filling Glass noodles 25g Shiitake mushroom 220g Ginger 10g Garlic cloves 3 Salt 1/4 tsp Soy sauce 1 tbsp Carrot 200g Sweetcorn 75g Sesame oil 1 tsp 1. Soak the glass noodles in hot water for 15 minutes until soft. 2. Cut off the stems of the mushrooms, and then cut into thick slices. Mince ginger and garlic into puree. 3. Roast the carrots in a 200 degree oven for 20-30 minutes (can be steamed or boiled in water), and cut into small pieces. 4 . Stir-fry the mushrooms slices with ginger, garlic and a small amount of oil, add salt and soy sauce, cook for 5-8 mins. 5. Add the cooked mushroom, carrots and glass noodles into a food processor, and blend into small pieces. 🥟 Olive Green Bean Filling Green beans 220g Chinese olive vegetables 30g Oil Water 1. Cut off the string end of green beans, and then cut into small pieces. 2. Stir-fry green beans with Chinese olive vegetables and a small amount of oil, add enough water to cover green beans, then cook with a lid on for 10 mins or until the green beans are soft. 3. Add the cooked green beans into a food processor, and blend into a paste. 🥟 Truffle Mushroom Filling Beech mushrooms 150g King oyster mushrooms 150g Oil Blackpepper Soy sauce 2 tbsps Maple syrup 1 tbsp Truffle oil 1 tsp Chopped spring onion 20g 1. Cut off the bottom of the beech mushrooms, and cut the king oyster mushrooms into dices. Then stir fry the mushrooms with a small amount of oil . Add black peppercorns, soy sauce, maple syrup and truffle oil to taste. 2. To make the filling, add the cooked mushrooms into a food processor, blend into a paste, then mix well with the chopped green onion. 🥟 Sweet Potato Chive Filling Chinese garlic chive 80g Oil Salt Cook sweet potato 160g Sesame paste 1tbsp 1. Chop the Chinese garlic chive into small pieces, then stir fry with a little oil and salt , until soften (about 8-10 minutes). 2. Use a fork to mash the sweet potato into a paste, add the sesame sauce and mix, then add the cooked garlic chive.
