Sometimes a traditional timbale is enough to put on a show. Because this is true cooking, the kind that requires time and patience, and a calm approach. Of course, you can find the time if passion calls. Ingredients for a timbale for 8 people (26cm diameter) For the risotto 600g Carnaroli rice 700g porcini mushrooms 1 clove garlic Aromatic herbs 2L meat broth 50g dried porcini mushrooms 100ml dry white wine 50g butter 75g Parmesan cheese Fresh thyme For the meat 4 veal ossobuco 70g all-purpose flour 1 celery stalk 1 carrot 1 whole onion 35g butter 100ml dry white wine 50ml brandy 1L meat broth Mixed aromatic herbs (sage, bay leaves, and fresh thyme) For the filling Pulled ossobuco 100g Rosa Camuna and Montasio cheese Parmesan cheese to taste Fresh thyme to taste To line the pan: Butter and breadcrumbs Videomaker: Website: www.matteosartorello.it YT: @MatteoSartorello01
