Welcome back to Heronbrook Farm Kitchen! Croque Monsieur anybody? A delicious French classic, a ‘Croque’ is a toasted sandwich with cheese, ham and bechamel sauce. A good one is like a little piece of heaven and usually puts the humble English ‘toastie’ to shame. In order to make the perfect Croque Monsieur, however, you need the perfect bread and this is where the Pain de Mie comes in. Literally translated as ‘Bread of Crumb’, the Pain de Mie is the nearest the French come to a white sliced loaf and is so-called because it is the only French bread without a developed crust.
