SCOBY AND HIBISCUS CAKE RECIPE INGREDIENTS • Wheat flour 1 cup (120 g) • Cornstarch 1 tablespoon (10 g) • Refined sugar 1 cup (180 g) • Baking powder – 4 g • Corn or sunflower oil – 70 ml • Eggs – 4 units • Scoby – 150 g (approximate value) • Hibiscus (leftover) – 30 g (initial dry weight) • Vanilla extract – as needed (as needed) PREPARATION METHOD Prepare the hibiscus for the kombucha, drain and chop the flowers into small pieces; place in a blender: scoby, egg yolks, essence and oil. Blend until you obtain a smooth puree; beat the egg whites until stiff peaks form (set aside); mix the sugar with the scoby puree and hibiscus in a large bowl until the sugar dissolves; mix the flour, cornstarch and baking powder in a separate bowl and add to the bowl with the wet ingredients; stir only as much as necessary for the dry ingredients to incorporate into the batter; add the beaten egg whites and stir gently so as not to lose the aeration; Place in molds and bake in a medium oven (180°C).
