Ingredients: Wheat flour - +/- 500 g Instant dry yeast - 8 g Sugar - 80 g Salt - 1 tsp Warm milk - 250 ml Butter - 60 g Egg - 1 pc. + egg white (yolk for greasing the buns) Vegetable oil - 30 ml. Filling: Peeled apples - 500 g Sugar - 100 g Butter - 30 g Cranberries - 150 g Cornstarch - 20 g Water - 50 ml. For greasing the buns: Egg yolk - 1 Milk - 1 tbsp. Prepare the filling. 1. Peel the apples, core them, and cut them into pieces. Place the butter, sugar, and prepared apples in a hot frying pan, stir, and cook until the apples are soft. 2. Mix the starch with water and add to the apples. 3. Add the cranberries. Cook, stirring constantly, until thickened. Remove from heat and pour into a clean bowl. Cover with plastic wrap and let cool to room temperature. Prepare the dough. 4. Mix warm milk, sugar, and yeast together, cover with a napkin, and let sit for about 10 minutes to activate the yeast. 5. Sift the flour into a mixing bowl, add salt, and mix. Don't add all the flour at once, as directed in the recipe; you may need slightly less or more flour depending on the quality of the flour and its moisture content. Add the yeast mixture, egg white (the yolk will be used to grease the pies before baking), melted butter, and vegetable oil. Mix well. Knead the dough. 6. Grease the dough and bowl with vegetable oil. Cover the dough with plastic wrap and let it sit in a warm place for 1-1.5 hours. During this time, the dough should double in size. 7. The dough should have risen, become airy, and porous. 8. Punch down the risen dough, divide it into small pieces (55-60 g each), and roll them into balls (I made 18 balls). Cover with plastic wrap and let them rest for 5-10 minutes. 9. Roll each ball into a flat cake, dusting the surface and dough with flour if necessary. Spoon about a tablespoon of filling onto each flat cake, pinch the edges together, and form into a pie. 10. Place the pies, seam-side down, on a baking sheet lined with parchment paper or a baking mat, spacing them apart. Cover with plastic wrap and let them rise for 20 minutes. Mix the yolk with one tablespoon of milk and carefully brush the pies with this mixture. Bake in a preheated oven at 180 degrees Celsius for 20-25 minutes, until golden brown. Please take your oven's temperature into account. Grease the hot pies with butter to soften the crust. 11 Apple and cranberry pies are ready!
