PhoLog: Hanoi (Northern) Style Beef Pho Recipe and Follow Along

Hanoi Style Beef Pho Broth Ingredients: Large ginger Large fuji apple 4-5 Shallots 4-5 pounds beef bones 2-3 pounds pork bones, feet or knuckle 1-2 pounds of beef brisket 8 liters of high quality water 4 tablespoons of star anise, coriander seeds, dried shrimp, fennel. 2 tablespoons of cardamom pods & dried earthworms. 2-3 tablespoons of sea salt ¼-½ cup fish sauce Bowl Ingredients: Fresh pho noodles Thinly sliced brisket Thinly sliced ribeye or round eye Green onion thinly sliced Green white sliced long way Garlic Serrano/Jalapeno and Garlic Freshly cracked black pepper Accoutrements: Culantro and or thai basil Lemon or lime wedges Fish sauce Special Characteristics of Hanoi/Northern Style Pho Served with no bean sprouts Thick fresh noodles Broth is very light and not sweet at all Red chili sauce only no hoisin sauce How I Make the Broth Parboil the beef bones, pork feet & brisket with some cold water to start and some salt. Bring to a boil for 5 minutes and rinse under cold water and get into the main pho pot. Fill the main pho up with high quality water (8 liters). Add the parboiled bones and brisket into the pot and bring to a low boil. Add your charred ginger, apple & shallots to the main pot. Add your dry spices to the main pot. After 1 hour take out the beef brisket and soak in water for another hour. Dry the brisket out and thinly slice. Set aside. Add 2-3 tablespoons of sea salt here and let it boil for another 2 hours. 3 hours total heat time and turn off the heat. Fish out the fresh aromatics and toss. Fish out the beef bones and pork knuckle and set aside. Do as you wish with these things but I do not throw them away. Bring the final pot up to a boil again and taste the broth seasoning with salt and fish sauce as needed here. Bowl Assembly Rinse out your fresh pho noodles and drain - ridding it of its nasty oils it is lined with. Add your thinly sliced brisket, rare steak. Add your green onions. Pour that hot broth and enjoy! Enjoy with thinly sliced serranos and garlic quick pickled with rice vinegar. Thank you all for watching!
