Cook Expert: Simply prepare the ingredients, play the video and follow along! INGREDIENTS 1 onion, halved 1 garlic clove 2cm piece ginger 1 bunch coriander, chopped, including roots 1 tbsp homemade vegie stock or 2 stock cubes 1 green chilli, include seeds for a spicier twist Zest of 1 lime & juice 1 tbsp oil 1 tbsp fish sauce 1 tsp ground coriander 1 tsp ground cumin 3 fresh or frozen kaffir lime leaves (bottled also an option) 600g chicken thighs, trim fat, diced 3cm pieces 200g sweet potato, diced with dicer, or by hand 1-2cm pieces (quicker cooking time if 1cm pieces) 400g coconut cream, light if preferred 150g green beans 100g spinach (optional) METHOD Place onion, garlic, ginger, coriander, stock, chilli and lime zest in bowl. Run EXPERT FUNCTION, start at speed 3 & slowly increase speed. Stop after approx. 20sec, scrape down sides & repeat. Make sure everything is finely chopped before next step. Add oil, fish sauce, ground coriander & cumin. Cook 3min/Sp 3/110 degrees. Add kaffir lime leave, chicken, sweet potato & coconut cream. Cook 10min/Sp 1A/110 degrees. Add beans. Cook 5min/Sp 1A/110 degrees. Once cooked stir through spinach & juice of the lime. Serve on rice or zoodles. Serves 4 Subscribe to our channel for more recipes and product tips & tricks!
