Why He Keeps Baking — The Last 2 Days of Japan’s Top-Rated Bakery | Ayumu Iwanaga of Le Sucré-Cœur

For years, he built one of Japan’s most celebrated bakeries. In its final days, he is still searching for something in the dough. (Subtitles are available for a better viewing experience.) 【Le Sucré-Cœur Kitashinchi | Osaka, Japan】 In Kitashinchi, Osaka, one of Japan’s most influential bakeries quietly reached its final days. “Le Sucré-Cœur” was once ranked No.1 on Tabelog, Japan’s largest restaurant review platform.Since its founding in 2004, the bakery has inspired countless bakers across the country. On March 15, 2024, the Kitashinchi location closed its doors. This film documents the final two days leading up to the closing. Chef Iwanaga has spent years pursuing his own philosophy of bread making — long, low-temperature fermentation, high-heat baking, and a deep respect for ingredients. To him, bread is not something fully controlled by humans, but something shaped together with nature. Behind the success were struggles: isolation within the industry, the challenges of scaling a business, marketing, and the reality of closing. And yet, he continues to bake. “When I return to Kishibe, I want to overwhelm people with the quality of my bread. That is my proof of existence.” This is not just a story about closing a bakery. It is a story about failure, persistence, and starting again.
