Cooking with Caroline Fleming: Bolognese

Who doesn’t love a good bolognese? Most of us have enjoyed this classic dish since childhood. We are also more health conscious than ever, and we know what a fantastic source of vitamins and minerals, different vegetables can be. My bolognese is made of different grated vegetables, and my children cannot taste them. The meat can always be substituted with minced chicken, minced fish, minced tofu or minced aubergine if you don’t like beef. It tastes even better if you make it the day before, and if you make a double portion, you can use the other half to make a delicious lasagne another day. X x x Caroline
