Soften the remaining butter and coat the pans with it. Preheat the oven before baking. ☆Recipe ① Mix sugar, honey, and eggs thoroughly. ② Heat in a double boiler to 30-35°C. Be sure to remove the double boiler from the heat! ③ Add butter to the double boiler instead. ④ Beat using a mixer on high speed. ⑤ Once you can draw a ribbon, reduce the speed to smooth the texture. Beating thoroughly will result in a moist batter! ⑥ Mix in the sifted flour. Mix by scooping from the bottom. ⑦ When the mixture is still a little granular, add the lemon juice and lemon zest. ⑧ Mix 40-50°C butter into the batter. Be careful not to overmix! Mix until fluffy and glossy. ⑨ Fill the mold 90% full and bake at 170°C for about 13 minutes. ⑩ It's ready when it's elastic and well browned. ⑪ Add lemon juice to the sifted powdered sugar and mix well. ⑫ It's ready when it's glossy! ⑬ Decorating the Lemon Cake ☆About the Icing The quantities are just a guideline, so adjust to your desired consistency! On very humid days, warm the icing slightly in the oven at around 100°C.
