Nostalgia Cream Roll | Complete Pastry Cream Roll Tutorial with All the Tips If you want to make a soft, tender, crack-free cream roll just like the old pastries, this tutorial is for you. 😍 In this video, I've taught you all the important tips that will make your roll always look professional, step by step; from shaping the egg whites to the correct oven temperature, rolling, whipping cream and final resting. ✨ If this is your first time making rolls, you will get great results by following these tips. ━━━━━━━━━━━━━━━ 🧁 Ingredients for the roll 🥚 Egg whites: 150 grams 🍬 Sugar: 90 grams (add in 3 stages) 🥚 Egg yolks: 75 grams 🌾 Pastry flour: 90 grams 🌽 Corn flour: 15 grams 🌼 Fresh vanilla powder: ¼ teaspoon or 🍦 Vanilla essence: 1 teaspoon 💧 Cold water: 35 grams ━━━━━━━━━━━━━━ 🤍 Ingredients for the cream inside the roll 🥛 Heavy cream: 300 grams 🧀 Mascarpone cheese or cream cheese: 100 grams 🌹 Rose water: as desired 🍬 Powdered sugar: 2 tablespoons (or to taste) ━ 💡 Very important tips ✅ All ingredients, bowls, and mixing blades must be completely cold. ✅ The egg whites should be completely cold. ✅ The bowl and beaters should be free of any traces of fat or yolk. ✅ Do not over-form the egg whites; only to the soft peak stage. ✅ When folding the ingredients, work slowly and patiently so that the egg whites do not puff up. ━━━━━━━━━━━━━━━ 🔥 Electric oven temperature ✅ Preheat the oven completely. ✅ Place the tray on the middle shelf. 🌡️ Temperature: Preheat the oven to maximum temperature (top and bottom heat) 250 degrees Celsius (after moving the tray to the middle shelf of the oven) ⏰ Cooking time: 5 to 6 minutes ❌ Do not use fan (convection). The rolls should only turn light golden, not dark. ━━━━━━━━━━━━━━━━ 🔥 Gas oven temperature ✅ Preheat the oven to maximum temperature.
