Bring water and salt to a boil, then add the salmon skin for a few seconds, remove from heat. 2. Set aside the remaining flesh on the salmon skin, cut into pieces, and boil for another minute, drain for about 5 minutes. 3. Transfer to a bowl, then add the egg whites and baking powder, mix well. 4. Coat with sang fen flour, then fry until crispy, drain. 5. Grind the egg yolks with a sieve. 6. Heat a frying pan, add the oil, garlic, and unsalted butter, sauté until fragrant, then add the egg yolks and curry leaves. 7. Chop the red chili peppers and add them to the pan, mix well. 8. Add the Cafe Cream, salt, chicken stock powder, pepper, and powdered sugar, mix well, then add the salmon skin, stir briefly. 9. Boil water and salt, then dip the salmon skin for a few seconds and remove. 2. Scrape the remaining meat on the salmon skin, then cut the skin into pieces and boil again for 1 minute. Let sit for about 5 minutes. 3. Transfer to a bowl, then add egg white and baking powder. Mix well. 4. Coat with potato starch, then fry until crunchy. Set aside. 5. Mash salted egg yolks with a strainer. 6. Heat a pan. Add oil, garlic, and unsalted butter. Sauté until fragrant, then add salted egg yolks and curry leaves. 7.
