Portuguese Seafood Rice Recipe Preparation time:20 min Cooking Time: 40 min Ready In: 60 min Level of Difficulty: Medium Servings: 6 ingredients olive oil 4 tbsp onion 2, chopped garlic 6 large cloves, chopped coriander 50g Red pepper 1 chopped tomatoes 2, roughly chopped chopped tomatoes 400g tin basmati rice 400g mussels 750g, cleaned large raw peeled king prawns 200g, and ad 200g not peeled if you like it. Fish of your choice ( Salmon, Cod, Scallops.) 400g flat-leaf parsley half a small bunch, roughly chopped, including stalks White wine 2dl Water 1/5 of litter boiled How to Prepare a Perfect Seafood Rice? Grab the biggest saucepan in the house, because you will need it. Then let's start this seafood rice. PREPARATION: 1- Put your saucepan on low heat, and start adding the Olive oil, onions, garlic, and red pepper. Mix all and let them cook till you see that the onions are turning a clear brow. 2- Add the fish of your choice to the previous mixture, and let it cook in medium heat for 5 minutes. Then mix it and break it into big chunks with the spoon. Add the tomatoes, and the tomato sauce mixing all together. Cover and let it cook for 5 minutes. 4- Now add the king prawns and the mussels. Seasoning with salt, parsley, and wine. Let it cook for 10 minutes to pick the flavor, and add 1/4 of boiled water. 5- When all is boiling add the rice, mix it all together, and cover to cook for 10 minutes. Add more water if you see is needed. When the rice is cooked spread the coriander, and use a clove of garlic cut very thinner to bring up the flavor. Take out of the heat reserve for 10 minutes, and serve.
