Balti Gosht Recipe | Rich, Flavorful Traditional Mutton Curry
Ingredients Mutton (with bones and fat) – 750 grams Onions – 2 medium sized (sliced) Tomatoes – 2 medium sized (chopped) Yogurt – ½ cup Oil – 1 big cooking spoon Ginger + garlic + green chilies – 3 tsp (crushed together) Bay leaf – 2 Cloves – 7 Cinnamon stick – 1 Green cardamom – 3 Black cardamom – 1 Whole black pepper – 1 tsp Whole white cumin seeds – 1 tsp Roasted coriander powder – 1 tbs Kashmiri red chili powder – 1 tbs Dara Mirch – 1 tsp Salt – 1 tsp Turmeric powder – ½ tsp Garam masala powder – ½ tsp For Garnishing Green chilies – 3 (cut in small pieces) and 4 (whole) Tomato – 1 (sliced) Garlic – 1 piece (Jullian cut) Coriander leaves - handful Recipe On a medium to high flame put the pressure cooker and pour the oil to heat up. Then add sliced onions and stir to mix and cook. Then add bay leaves, cloves, cinnamon stick, green cardamom, black cardamom, whole black pepper and whole white cumin seeds into the cooker and stir to mix and cook. When onions change color to golden brown add the meat into the cooker and stir to mix with a little bit of water and cook. After 6 mins of cooking add diced tomatoes into the cooker and stir to mix and cook. Then after a while add roasted coriander powder, Kashmiri red chili powder, Dara Mirch, salt, turmeric powder and garam masala powder into he cooker and stir and mix to cook. Then add the ginger, garlic and green chilies mix that is crushed together and stir and mix to cook. Add a little bit of water and stir to mix and cook. Then add yogurt and stir to mix and cook. Then after a while add 3 cups of water and close the lid of the cooker for meat to get tender under pressure for 25 to 30 mins after the whistle starts. Then after the above-mentioned time add sliced tomatoes and green chilies cut into small pieces into the cooker and stir to mix and cook. Then add the remaining yogurt which is still in the bowl with little bit of water into the cooker and stir to mix and cook. Now add the Jullian cut ginger, coriander leaves and whole green chilies into the cooker and stir and mix to cook. After cooking for a while, dish it out on a plate. Your yummy Balti gosht is ready.
