Easy Rainbow Veggie Tacos for Kids | Bloom & Petal Episode 1

🌸 Welcome to Episode 1 of The Bloom & Petal Cooking Show! 🌸 In our very first episode, the Petals learn all about eating the rainbow while making colorful Rainbow Veggie Tacos with a delicious Avocado Crema. At Bloom & Petal, we believe healthy food should be fun, hands-on, and something children help create. Through cooking, culture, wellness, and creativity, we’re helping children build confidence one recipe at a time. 🌈 RECIPE: RAINBOW VEGGIE TACOS Ingredients: • Mini tortillas or Shells • Purple cabbage, shredded • Carrots, shredded • Red bell peppers, diced • Yellow bell peppers, diced • Spinach, shredded • Mushrooms, cooked 🍄 Smoky Mushroom Taco Filling Ingredients: 16 oz mushrooms, finely chopped 1/2 onion, diced 2 cloves garlic, minced 3 tbsp coconut aminos 1 tsp smoked paprika 1/2 tsp salt 1 tbsp olive oil Directions: 1. Heat olive oil in a skillet. 2. Sauté onions until translucent. 3. Add garlic and cook for 30 seconds. 4. Add mushrooms and cook until most of the moisture evaporates. 5. Stir in coconut aminos, smoked paprika, and salt. 6. Cook for another 2–3 minutes until flavorful and slightly browned. 🥑 AVOCADO CREMA Ingredients: • 2 ripe avocados • 1/2 cup vegan sour cream • 1 tbsp olive oil • 1 tbsp apple cider vinegar • 1 tsp garlic powder • 1 tsp onion powder • 1/2 tsp cumin • Salt to taste Directions: Add all ingredients to a blender or food processor and blend until smooth and creamy. 🌼BONUS ACTIVITY FOR LITTLE CHEFS🌼 Did your child enjoy making Rainbow Veggie Tacos with us?
