The 2* Michelin Cake With Only 2 Elements

This simple cake from Dinner by Heston Blumenthal has only two things to make.You can achieve it at home AND you can keep this ready to go in the freezer, so you can have a stunning dessert with little fuss at short notice. This requires some technical skill with the dough and shaping, but I believe is achievable by anyone. This dessert also teaches brilliant lessons in flavour and deliciousness and what you need to shoot for with anything you cook. WARNING: Contains HIGH Levels of Butter. This is no Victoria Sponge. Tarte Tatin: @lczw Flavour & Deliciousness: @9gGY Footage of Heston's Desserts from Heston's Marvellous Menu: @ Recipe for TIPSY CAKE Adapted from Historic Heston - Heston Blumenthal ELEMENT 1 - The Balls 70 g milk 12 g fresh yeast or 5 g instant / dry yeast 4 eggs + 1 egg (M 50-55 g eggs) 545 g plain flour 12 g salt 65 g sugar 340 g unsalted butter (if using salted butter use 6 g less salt) ELEMENT 2 - The Cream 475 g cream 100 g demerera sugar 50 g caster sugar 45 g sauternes 60 g brandy 15 g vanilla paste (check instructions) or 1 vanilla pod Zest of: 1 orange, 1 lemon & 1 lime INSTRUCTIONS: THE BALLS Cut butter into cubes and leave out to get to room temperature. Mix a little of the milk with the yeast to dissolve. Then mix yeast mixture with the rest of the milk and 4 of the eggs. Mix flour, salt and sugar in the base of a stand mixer. Add the egg mixture and knead using the dough hook attachment on medium (5-7 out of 10). This will typically take 10-15 minutes. Refer to video for how it should look. Occasionally push ingredients stuck around the bowl above the dough ball into the mixture if that happens. -Add remaining egg and knead until mixed in and uniform. (You may need to encourage the dough to mix fully by scraping down the sides) Once you can stretch the dough as shown begin to add the butter piece by piece on medium speed. Once you have mixed in all the butter and you have a uniform dough put it in the fridge overnight. The Next Day: Make clarified butter by gently warming a stick and then separating the fat (top layer) from the liquid. Or, use ghee. Cool down. (this needs to be liquid to coat the balls but you can gently warm this back up to tepid. Put caster sugar into a bowl ready for coating the balls. Take out of the fridge, roll out to 2 cm thick and cut into batons. 2 cm wide. Working quickly, cut into 12 g cubes and then roll in to a ball. Place balls back into fridge. Once cold remove balls and roll in the clarified butter in a bowl and then rolls the balls in caster sugar. THESE BALLS CAN BE FROZEN AT THIS STAGE FOR YOU TO PULL OUT WHENEVER YOU NEED THE TIPSY CREAM Mix all ingredients for the cream together and warm just a little to dissolve the sugar. Put to one side until needed. FINISHING Place 7 balls in a roughly 10 cm cocotte or ramekin (or as many as you can easily fit in one layer, leaving a little space is fine as these expand) Leave to prove for 3-4 hours at room temp until they double in size and the butter/sugar shell has cracked. Turn oven to 180ºC. Place pan upside down or pizza stone in the oven too. When proved place the prooved balls in the oven on the wire rack (not the pan or stone) for 15 mins. Separate the balls carefully and pour over 2 tbsp of cream Return to oven for 4-6 mins onto the stone or upside down pan Remove and add 1 tbsp cream Return to oven for 4-6 mins onto the stone or upside down pan Remove from the oven THE COOK CAN BE HALTED HERE UNTIL YOU NEED -To continue as normal add final 1 tbsp of cream and return to the oven until the cream just reduces to a glaze (4-5 minutes) (IF YOU HALTED THE COOK THIS STEP MAY REQUIRE LONGER AS THE CAKE WILL BE COLD) SERVE!
