Free stuff to do on the Big Island of Hawai'i
Last week we did a rapid fire video of all my favorite stuff in oahu, and this week we’re gonna be taking a deeper look into the big island. Like before we aren’t gonna be doing a bunch of cooking but we will be touching on a bunch of the stuff we did on this trip that you might not see on some other Hawaiian itineraries, and covering some lessons that makes the big island special . Mochiko tuna belly recipe: ingredients: Ahi tuna belly(much cheaper than ahi loin in hawaii, but use whatever you want) Mochiko rice flour 1 inch Ginger finely minced/grated 1 tbsp minced Garlic Salt Soy sauce 1 Green mango 1/4 fresh Pineapple 1/4 cup Cilantro 3 tbsp Green onion 2 Fresh yellow passionfruit(optional) 3 cups shredded Napa cabbage 5 tbsp Butter 1-2 tbsp miso salsa: 1. Peel and finely dice one green mango 2. Season 1/4 of a fresh pineapple with light sprinkle of salt, and pan sear until charred 3. Dice pineapple and add to diced mango 4. Combine diced fruit with 3 tbsp of thinly sliced green onion and 1/4 cup of finely chopped cilantro 5. Season to taste with soy sauce and optional pulp of two fresh yellow passionfruit Miso butter napa cabbage: 1. Sauté 3 cups of shredded Napa cabbage 2tsp grated ginger 2 tsp grated garlic in 2 tbsp butter until cabbage is softened 2. Drain any liquid that comes out, and continue to cook cabbage until lightly charred/browned 3. Add in 2-3 tbsp dashi stock(chicken broth works too) and 1-2 tsp of miso, toss to coat(add more stock and season to taste with miso as needed) 4. Turn off heat and add in 2 tbsp of cold butter 5. Stir to melt butter and emulsify sauce Tuna: 1. Season tuna steaks with salt and grated ginger 2. Evenly coat in mochiko rice flour 3. Pan fry in 2 tbsp oil 3-4 min on each side 4. When crispy and medium/med rare, allow to drain on paper towel or cooling rack Serving instructions: 1. First plate cabbage with miso cooking liquid/sauce 2. Top with tuna 3.
