Anticuchos: Barbecue, from Peru

On today’s episode, we’re gonna be trying out a local restaurant, do a little grocery shopping, talk about some heartfelt science, and of course we’re gonna learn how to make Peruvian anticuchos at home! Recipe: Marinade: 1 jar(8oz) aji panca 1/4 cup vinegar 1/4 cup neutral oil 1 tsp salt 6 cloves garlic(pureed, grated, or smashed) 1/2 tsp cumin 1/2 tsp black pepper 1. Mix together, and use as needed. Store up to a week Beef heart: 2 pounds of untrimmed beef heart makes about 1.5 pounds of usable cuts 1. Remove fat and sinew from the outside and inside of the heart 2. Trim off sinew from inside of the heart and slice into 1 cm pieces 3. Skewer heart pieces lengthwise 4. Generously spread on marinade, but reserve some for basting later on 4.5 dilute remaining marinade with extra vinegar/oil until it reaches a pourable/baste-able(is that a word lol? consistency 5. Marinate for at least 4 hours 6. Cook over charcoal or on an open fire grill 7. Flip after 1 minute, and baste with diluted marinade 8. Continue to flip/baste until skewers are fully cooked(about medium temp, should still be a little pink) 9. Enjoy! Potato: 2-3 medium potatoes 1/4 cup oil Salt to taste 1. Boil medium/waxy type potatoes until fully cooked(a knife easily passes thru) 2. Peel and slice into thick chunks 3. Toss in 1/4 cup of oil until evenly coated 4. Cook on grill, and flip once one side is browned and crispy Rocoto sauce: 1/3 cup rocoto puree(you can sub with any blended red spicy pepper with seeds removed, Jalapeños work great) 1/4 of a red onion, finely minced 3 tbsp green onion tops finely sliced Juice of 1 lemon or 3-5 tbsp vinegar Salt to taste 1. If using fresh peppers, remove seeds/ribs, and blend until smooth 2. Combine with other ingredients, and set aside.
