Every morning, Aurelia Tegas goes to her vegetable garden. Like her home village of Talana, it lies 700 meters high in the mountains of Ogliastra. In Aurelia's kitchen, only mountain dishes are served – pasta, cheese, vegetables, or meat. Many shepherd families still produce almost everything themselves. The ham is the pride of the people of Talana – and an ideal appetizer for culurgionis, Sardinian pasta parcels with a cheese and potato filling and tomato sauce. "At the table in..." goes back to where European cuisine has its roots: in the regions of Europe where the fields, pastures, and fishing grounds produce authentically and are still enjoyed today.
