豬肉&韓式泡菜炒烏龍麵做法/ pork & kimchee yaki udon《MASAの料理ABC》

Japanese Udon Noodles Stir Fried with Pork & Kimchi / Buta Kimuchi-shō Udon Season 1 - Episode 7 [ 1 Serving ] [ Ingredients ] Onion - 1/4 piece Spring onion - 2~3 stalks Dried Shiitake mushroom - 3 pieces Sliced pork belly - 80gm Kimchi - 100gm Frozen Udon - 1 bag ( 200gm ) can substitute with any kind of noodle ( boil first then only stir fry ) [ Udon Sauce ] Shiitake mushroom liquid - 150cc Sake - 2 teaspoons Mirin - 1 teaspoon Soy sauce - 2 teaspoons Bonito flakes ( Katsuo bushi ) - some [ Seasonings ] Black pepper - some [ Preparation ] 1. Slice onion. 2. White portion of spring onion diagonally cut & thinly slice the 2 inch green portion of spring onion. 3. Drain off excess water from the Shiitake mushroom & slice. 4. Pork belly cut into bite size pieces. 5. Combine all the [ Udon Sauce ] ingredients & mix well. 6. Frying pan over medium-high heat, place in pork pieces, season with black pepper, stir fry until golden brown, take out & set aside. 7. Keep the oil from stir fried pork pieces, add onions & white portion of spring onions, stir fry until translucent. 8. Add Kimchi & stir fry. 9. Pour the [ Udon sauce ] & return the pork pieces. 10. Add frozen Udon, cover with lid over low heat & simmer for 2~3 minutes or until loosen. 11. Last, add green portion of spring onions, stir well & cook until the sauce of liking. Turn off the heat & serve immediately ! [ Tips ! ] keep the soaked Shiitake mushroom liquid, do not throw away ! can substitute with any kind pork part ( Boston butt ), sliced beef or sliced lamb ! stir fry to neutralize the acidity of the Kimchi taste ! does not have to be defrost the Udon, heat the Udon in a sauce directly & can absorb the taste while defrost ! can substitute with any kind of noodle you like.
