Woodfired Aubergine Parmigiana

Aubergine Parmigiana from the woodfired oven is a great addition to your vegetarian recipe library. A bit like fish pie or lasagne, all the work is done in advance and then you can put it in the oven to come up to heat and get a good bubble going on the top before serving. All you've got left to wash up is the serving dish and the clean plates. It's also a delicious side to some barbequed lamb or grilled chicken. Aubergines are part of the potato family so need to be cooked through well first; they also don't have much flavour of their own so will take on all the tomatoey garlicky loveliness in the sauce and the grilled cheese topping.
