How to make the original Bursa-style milk halva, with its golden brown top and soft interior that delights the palate? Let's get started right away. INGREDIENTS: 1 kg milk (village milk is tastier) 1 cup minus two fingers of granulated sugar (add a full cup if you prefer it sweeter) 1 cup minus two fingers of flour 100 gr butter FOR THE TOPPING: hazelnuts, walnuts... (whichever you prefer) PREPARATION STEPS: 1. Add 1 liter of milk to a saucepan and place it on the stove. (The milk should be hot) 2. Add 100 gr of butter to a wide-bottomed saucepan. Let it heat up well. 3. Add the flour to the heated butter and sauté for about ten minutes over the lowest heat setting, stirring constantly to prevent burning or excessive browning. 4. Gradually add the hot milk to the lightly sautéed flour, whisking with a wire whisk to prevent lumps. Continue adding the milk gradually to the mixture until a smooth consistency is achieved. 5. Once it thickens, add the sugar, stir once, and turn off the heat. 6. Don't leave it on the stove for too long; two or three minutes is enough. Because it contains flour, it will thicken as it sits. 7. Immediately pour the milk halva into a baking tray or suitable dish. Let it sit for half an hour to allow a crust to form on top. 8. After resting for half an hour, preheat your oven to 220°C and turn on only the top heating element. Ensure only the top browns carefully. 9. Let the milk halva rest for another half hour after taking it out of the oven. 10. You can decorate it as you wish. I served it with hazelnuts.
