(divide into whites and yolks) Sugar - 100 g Wheat flour - 76 g Cocoa - 17 g Melt butter - 28 g Prague cream: Condensed milk - 80 g Cocoa - 8 g Yolk - 1 pc (C1) Water - 15 ml Butter - 120 g Glaze: Dark chocolate - 60 g Butter - 60 g Apricot jam - 40 g Hello everyone! You are on the DAeDA channel! Today we are making the legendary Soviet cake - the Prague cake! The classic Prague cake has an amazing taste: chocolate sponge cake, Prague chocolate cream, sourness from apricot jam and chocolate ganache - all this makes the cake incredibly delicious! We have a classic recipe! The Prague cake recipe is simple, but it is better to cook it in two stages. The first stage is making the chocolate sponge cake, the second stage is making the cream, assembling and decorating the cake. The sponge cake in the Prague cake is chocolate. In order for the chocolate sponge cake to rise well, it is important to pre-separate the eggs into whites and yolks. The butter should also be melted in advance and cooled to room temperature. Beat the egg yolks with half the sugar until lighter and increased in volume. Separately beat the whites with the second half of the sugar. Next, add 1/3 of the beaten whites to the yolks, gently mix with a spatula. Add sifted flour and cocoa. Then add the remaining whites to the dough in two stages. Knead carefully with a spatula so that the dough does not settle. At the last stage, add butter. The dough is ready. The sponge cake needs to be baked in a ring in an oven preheated to 180 degrees for about 50 minutes. The finished sponge cake needs to be removed from the mold, wrapped in cling film and left to mature for at least 8 hours. The sponge cake turns out quite juicy and does not require soaking. Now the Chocolate Cream. The cake is Prague, hence the Prague cream. Prague cream is special. To prepare it, shake the yolk with water, add condensed milk and brew the mixture over low heat. Then cool. When the mass has cooled, beat the butter at room temperature until it lightens and increases in volume. Then add the custard base to the cream in several stages so that the cream does not separate. Lastly, add cocoa. Prague cream is ready. The cake cream turns out dense and stable. Now the homemade Prague cake needs to be assembled. Cut the sponge cake into three identical layers, put half of the cream on the bottom layer, then the second layer, the second half of the cream and the third layer. Cover the top of the cake with apricot jam and put the cake in the refrigerator for an hour to stabilize. Cover the cooled chocolate cake with chocolate glaze (we used dark chocolate melted with butter) and decorate to your taste. The homemade Prague cake turns out very tasty and beautiful!
