In today’s video, I’m sharing a cozy fall-inspired meal prep packed with nourishing, family-friendly recipes that make healthy eating feel easy and delicious. These are gluten-free, dairy-optional, and perfect for busy weeks when you want quick, balanced meals that taste amazing. We’re making: 🧁 Protein Pumpkin Muffins – soft, perfectly spiced, and full of cozy fall flavor 🧇 Pumpkin Protein Waffles (with Oat Flour) – fluffy, nutrient-packed waffles perfect for freezing or meal prepping 🍳 Starbucks Copycat Egg Bites (Oven-Baked) – creamy, high-protein breakfast made right at home 🍎 Apple Cinnamon Chia-Flax “Overnight Oats” – cozy, fiber-rich breakfast with no oats needed 🥦 Oven-Baked Chicken Thighs with Carrots, Broccoli & Cheese – an easy, one-pan dinner everyone will love 🦃 Savory Ground Turkey Fall Skillet – hearty, flavorful, and perfect for lunch or dinner prep Recipes: 🧁 Protein Pumpkin Muffins Ingredients: • 1 cup pumpkin purée • 2 eggs • 1 scoop vanilla protein powder • ¼ cup maple syrup • 1 tsp vanilla extract • 1 ½ cups almond flour • 1 tsp baking powder • 1 tsp pumpkin pie spice • Pinch of salt Directions: 1. Preheat oven to 350°F and line a muffin tin. 2. Whisk wet ingredients together. 3. Add dry ingredients and mix until smooth. 4. Spoon into muffin cups and bake 20–22 minutes, until a toothpick comes out clean. 🧇 Pumpkin Protein Waffles (with Oat Flour) Ingredients: • 1 cup oat flour • 1 scoop vanilla protein powder • 1 tsp baking powder • 1 tsp pumpkin pie spice • ½ tsp cinnamon • 2 eggs • ½ cup pumpkin purée • ¾ cup almond milk (or milk of choice) • 1 tsp vanilla extract Directions: 1. Preheat waffle iron and spray with nonstick. 2. Whisk dry ingredients in one bowl, wet in another. 3. Combine and stir until smooth. 4. Cook 3–4 minutes until golden brown. 5. Serve with almond butter, pure maple syrup, or Greek yogurt. 🍳 Starbucks Copycat Egg Bites (Oven-Baked) Ingredients: • 8 eggs • ½ cup cottage cheese (or dairy-free yogurt for DF) • ½ cup shredded cheese (optional) • 1 cup diced veggies (spinach, peppers, onions) • Salt and pepper to taste Directions: 1. Blend eggs, cottage cheese, and cheese until smooth. 2. Pour into a greased muffin tin and add veggies. 3. Bake at 325°F for 25–30 minutes or until set. 4. Cool and store in fridge up to 4 days. 🍎 Apple Cinnamon Chia-Flax “Overnight Oats” (no oats!) Ingredients: • 2 tbsp chia seeds • 1 tbsp ground flaxseed • ½ cup almond milk • ¼ cup unsweetened applesauce • ½ tsp cinnamon • ½ tsp vanilla extract • Optional: diced apple, walnuts, or almond butter Directions: 1. Combine all ingredients in a jar and stir well. 2. Refrigerate at least 2 hours or overnight. 3. Stir before eating and top as desired. 🥦 Oven-Baked Chicken Thighs with Carrots, Broccoli & Cheese Ingredients: • 4–6 boneless skinless chicken thighs • 2 cups chopped carrots • 2 cups broccoli florets • ½ cup shredded cheese (optional) • 1 tbsp olive oil • Salt, pepper, garlic powder to taste Directions: 1. Preheat oven to 400°F. 2. Arrange chicken and veggies on a parchment-lined sheet pan. 3. Drizzle with olive oil and season. 4. Bake 25–30 minutes until chicken reaches 165°F. 5. Sprinkle cheese on top for the last 5 minutes if using. 🦃 Savory Ground Turkey Fall Skillet Ingredients: • 1 lb ground turkey • 1 cup chopped onion • 1 cup diced butternut squash • 1 cup spinach or kale • 1 tsp garlic powder • 1 tsp thyme • Salt and pepper to taste Directions: 1. Cook ground turkey with onion until browned. 2. Add carrots and squash, cover and cook until tender. 3. Stir in spinach, seasonings, and cook 2–3 more minutes.
