A Prefect Good Luck Meal, Katsudon Recipe (Japanese Pork Cutlet Rice Bowl)
Today I’m going to show you how to make a classic Japanese comfort food, katsudon. In Japanese, “katsu” sounds like the word “to win”, so katsudon is often enjoyed as a good luck meal before exams or big challenges. I will show you step by step how to make it. It is delicious, easy to prepare, and once you try it, you will want to make this tasty, crispy dish again and again. Full Recipe: 【Ingredients】(Serves 4) For the Pork Cutlet: •4 pork loin cutlets (tonkatsu cut) • Salt and pepper • 3 tablespoons plain flour • 2 eggs, beaten • About 2 cups panko breadcrumbs • Oil for deep frying For the Sauce: • 200 ml water • 1 tablespoon dashi stock • 3 tablespoons soy sauce • 3 tablespoons mirin • 3 tablespoons sake • 1½ tablespoons sugar For the Egg Mixture: • 1 onion, sliced • 6 eggs • 2 tablespoons green peas For Serving: •4 cups cooked Japanese rice Optional toppings: • Shichimi chilli pepper • Sansho (Japanese pepper) 【Instructions】 1. Place the pork between sheets of baking paper and gently pound it with a rolling pin. Score the meat to prevent it from curling, then season both sides with salt and pepper. 2. Coat the pork with flour, dip it into the beaten egg, and then cover it well with panko breadcrumbs. 3. Heat the oil and deep fry the pork until golden brown and crispy. If it turns a little darker than golden brown, don't worry. This is a home style meal and we learn as we go. Simply adjust the heat next time. Once cooked, remove from the oil, let it rest for a few minutes, and slice into bite sized pieces. 4. In a frying pan, add the water, dashi stock, soy sauce, mirin, sake, and sugar. Mix well and bring to a gentle simmer. 5. Add the sliced onion and cook until soft and slightly sweet. 6. Place the sliced pork cutlet over the onions in the pan. 7. Beat the eggs and gently pour them over the pork and onions. Sprinkle over the green peas. 8. Cover the pan with a lid and cook on low heat until the egg is softly set. The egg should be tender and slightly runny, not overcooked. 【Serving】 Serve hot steamed rice in bowls and carefully place the pork cutlet, egg, and sauce over the rice.
