Our popular "Ramen Shops Recommended by Ramen Shops" feature is now at its 25th bowl! Matsukasa's recommendation is the miso tanmen from Mendokoro Hanabusa ☆ This is the first tanmen in this series! Owner Maruyama-san is an unusual ramen enthusiast, having previously worked in apparel at a department store. He wanted to do something no one else was doing, so after much trial and error, he crafted these handmade noodles, which have a unique texture and delicious chewy texture that spreads the aroma of wheat the moment you slurp. ☆ They pair perfectly with the clear soup made with two types of carefully selected miso, and the crunch of the vegetables is also great! It was a bowl like no other. Incidentally, there are limits to how much manual labor can be put into them, so they only make about 30 bowls of handmade noodles per day! They're so popular that when they hear, "We're done with our handmade noodles for today," some people leave!
