This bread is called pan de pagès (farm bread) and is a delight due to its rustic flavor and the slight acidity of the sourdough. I hope you like it a lot and enjoy it! By the way! If your answer is NO, you HAVE to watch this👉:    • Cómo preparar TEQUEÑOS sin ACEITE | Freido...   Ingredients: Sourdough: -30 g flour -20 g water -5 g sourdough starter Dough: -330 g bread flour -200 g water -55 g sourdough starter -7 g salt Process: -Refresh the sourdough starter 3 hours beforehand, and when it has doubled, it will be ready. Mix the flour and water for the dough and let it rest for 30 minutes (autolysis). This will help with the kneading process. After this time, add the starter, salt, and a little reserved water (approximately 5 g). Knead for 10 minutes and leave the dough covered for 1 hour at room temperature (ideally 26-28°C). Fold it for the first time and let it rest for another hour. Fold it for the second time and shape it as shown in the video, bringing the corners to the center. Transfer the dough to a plate covered with a floured cloth to prevent it from sticking, and chill overnight. In the morning, preheat the oven to maximum (250°C in my case) using a cast-iron pot or baking stone. We transfer our loaf inside and bake for 20 minutes with the lid on (or generating steam with a tray and ice) and for another 30 minutes at 220°C. The total baking time will be about 40-45 minutes.
