Crab Cream Croquettes 180g Shredded Crab Meat 100g Sauternes 40g Butter-Sauteed Onion 2g Parsley 9g Granulated Sugar 3g Scallop Stock Béchamel Sauce 30g Butter 30g Flour 210g Milk Batter 1 Egg 40g Flour 30g Water Breadcrumbs (to taste) Flour (to taste) Tomato Sauce 400g Canned Tomatoes 1 Garlic Clove 40g Sauteed Onion Olive Oil (to taste) Salt, Pepper, and a Little Granulated Sugar 1-2 Sprigs of Thyme Parsley and Olive Oil (to garnish) Hello everyone.
