LAMB PROSCIUTTO | traditional food security on the homestead
Preserving food is a time-honored tradition and a vital skill (especially with the way the supply chain is in our modern world). I have absolutely fallen in love with curing meats and am delighted to share this simple process with you all. Shelf stable and absolutely delicious, salt cured Leg of Lamb (aka fenalar or lamb prosciutto) using this time-tested method of preservation is a great way to preserve the harvest thru the winter and into the next year! You can also use this method on a leg of goat or venison. Off grid or grid down, doesn't matter! By curing the meat in a salt and sugar mixture, you'll create a delicious, long-lasting dish that you can enjoy anytime! Cured meats like this also travel really well, just wrap in a cotton tea towel and its ready to go on the road! My little ones and I love this as our "girl dinner" served with assorted pickles, cheeses, and some crusty homemade bread, phenomenal! p.s. I encourage you all to source your meat as locally as you can manage! Less food miles, supporting local people, closing your supply chain etc… I think eating locally is vital to our future!
