Today was my third day in Saigon, Vietnam after 3 years and I definitely made up for lost time! I headed out for the ultimate Pho Bo (beef pho with brisket) in Ho Chi Minh City with no other than ‪@Macoi24‬ This was Vietnamese Street Food at its finest! We headed to a 68 year old Pho shop called Phở Tàu Bay (Áo Đỏ) whose owners are said to be one of the first to come down from Hanoi and open a restaurant in Saigon. The pho was amazing, rich, hearty and packed full of soft, fatty braised beef brisket. This is up there with the best I've had.
