I end up making this khichdi recipe multiple times a week - it's easy, it's wholesome and it feels like home every single time. You can add any vegetables of your choice, including potatoes. This Assamese Style khichri comes together in one kadhai and there is no pressure cooker required. If you soak the lentils before cooking, it cooks very easily.
